I’m addict to sweet-sour flavours, I love adding fruits in a savory meal or a pinch of salt in a dessert 😊 If it’s also your case, this fried rice in a pineapple will please you!
It’s a fun recipe that changes from daily routine, yet it’s really simple to make and I bet you have all the ingredients on hand! As a bonus, it’s a great way to “upgrade” rice leftovers !
These pineapple boats are:

Who wants some fried rice in a pineapple? 😋
The ingredients, for 2 boats:
1 small pineapple (Victoria or Queen)
200 grams of cooked rice
50 grams of carrot
50 grams of peas
5 fresh spinach leaves
1 small onion
1 tablespoon sunflower seeds
1 tablespoon soy sauce
Salt, pepper, curry
Cut the pineapple in half without removing its crown, then empty it out with a little knife. Be careful! Slice its pulp in fine quarters, then cut the carrot and the onion in cubes. Place pineapple, carrot, peas and onion in skillet over medium heat. While the mixture is cooked, chop the spinach leaves. Add some water to the pan. Once everything has evaporated, add the rice and sunflower seeds and increase the heat to golden. When everything is grilled, add the seasoning, soy sauce and spinach leaves. Stir briefly and remove from the heat. Put the rice in the pineapple bowl and enjoy immediately!
